Extreme Pound Cake

 

1 Lb. Sugar (2 1/4 cups)

1 Lb. All Purpose Flour (2 1/4 cups)

1 Lb. Butter

12 oz. Sour Cream

6 Large Eggs

1 Tablespoon Baking Powder

1 1/2 Tablespoon Vanilla Extract (a good substitute would 1/4 cup Grande Marnier)

1 Teaspoon Lemon Extract

1 Cup Berries (blue berry, cherry, black berry. Etc.....)

1/2 Cup Chocolate Chip

 

 

In large mixing bowl cream butter, sugar, vanilla extract, lemon extract, and

Sour cream. Sift flour then add 1/3 flour then 2 eggs beat on medium speed in

for 1 minute then another 1/3 flour and 2 eggs and beat for another minute

and add remainder flour then last 2 eggs and beat for 1 more minute.

 

Pre heat oven to 300 degrees, grease and flour a large ring cake pan pour batter into pan then put berries and chocolate chips on top. Place in oven on middle rack and bake for 1 hour 30 minutes.

 

Topping

1 Cup Powdered Sugar

1 tablespoon Milk

1/2 teaspoon Vanilla Extract

 

Mix the above ingredients until smooth. Then spread on top of cake whole it is still hot. Let cool over night then serve.
